I tried to execute the first command you sent and I got an error message "E: dpkg was interrupted, you must manually run 'sudo dpkg -configure -a' to correct the problem." After executing "sudo dpkg -configure -a" I was then able to rerun "sudo apt install plexmediaserver". Thank you so much for helping me with this! I'm sure if someone like you (that actually knows what they are doing) could look at my Pi I bet it's something super easy to fix!
